Honey cookies "Medovniky"
All my cookies are done from this very traditional recipe, which was years in our family a big tradition once Christmas was knocking at door.
As I have mentioned already before, I put some more creations in it, and as well modified a bit the cookies to stay more soft. It took me almost two years of tasting the consistence/measurements of flour and other ingredients.
From this amount of dough which you will learn now you can easily do around 90-110 cookies. Of course taken by average size of cookie cutters.
If you go step by step as all im explaining here, and doing things as many of them my Grand pa thought me, I guarantee you great job and excellent cookies. I have chosen this way to display many pictures and have small comments under, as sometimes, even small things can do difference! (that's what was happening to me often)

125g butter
4 full eggs
300g powder sugar

Cookies dough step by step

- Before we go for baking we have to choose theme, for which occasion we want our cookies to be presented.
There are many ideas, even in let's say in one party (occasion) we might do variety...
This example we will bake: Spong Bob, Patrick, Hallo kitties, Cupcakes, flowers, stars, hear - When we decide to bake, maybe half an hour before we take out the dough from the fridge to warm up, not to be very cold or hard, that we can work with it easily.
- Maybe i'm too organized but once I got everything in order ready, it was always saving my time and nothing was hectic or exhausting me.
Once all this is ready , we place a little flour on working area, cut a part of dough and start to roll. Don't forget to put bit of flour as well on the roll.
If you see that the dough is very soft you can work in more flour, but it should be normally good. Roll the dough till thickness around 5 mm. Time to time use spatula to check the dough is not stuck in surface.

When you rolled the dough in required thickness take cutter pour little in the flour and start to cut the cookies. One advise, for saving the space on the dough and as well your work, cut cookies in order and try to not keep a space. With spatula place cookies on the tray. Don't try to take cookies by hand, as it will completely damage the shape of cookie.. Very important thing! You have to keep space between cookies on the tray as they will puff a bit so they wont be stuck to each other, the shape will be damaged as well.
When you start to cutting cookies, preheat the oven to 180 C. Place cookies inside the oven. Bake for 6-7 minutes ONLY!!!!
First 3-4 minutes DO NOT OPEN OVEN!!!

While cookies are inside the oven, you work on other cookies to cut. Again work in dough, roll, cut and place to the tray.
AND DO NOT FORGET YOUR COOKIES IN OVEN!!!!
After 5 minutes cookies on bake, you might open the oven and check. They should be nicely lightly brownish. Soon you will have nice smell in the kitchen as well. Never keep cookies over baked or very dark or hard. Its taking 6-7 minutes to bake only. Take out the tray from oven, cool for 2-3 minutes and with spatula place cookies to your prepared cooling baking paper.

When cookies on cooling paper
COMPLETELY COOLED
brush them off flour
and place into the dark box.
Be very careful they are NOT HOT,
as if hot they will be stuck to
each other and completely damaged
to design.
Cover the box and keep in cool place!
You can ad one stick of cinnamon
into the box for the nicer smell.
